Today we’re taking the humble banana and pumping it up, literally. This soufflé merges French technique with a pancake’s soul, combining protein powder and banana for a dessert that’s both science-forward and spoonable.

- 01Preheat your oven to 375°F. Generously butter a 2-quart round baking dish or soufflé dish, making sure to get all the way up the sides.
- 02Separate the eggs, placing the yolks in a large bowl and the whites in a clean, dry mixing bowl.
- 03To the yolks, add mashed banana, milk, vanilla extract, and lemon juice. Whisk until smooth.
- 04Add the protein powder, flour, sugar, and salt to the banana mixture. Stir until just combined and no dry spots remain.
- 05Using electric beaters or a sturdy whisk, beat the egg whites to soft peaks.
- 06Gently fold one third of the whipped egg whites into the banana batter to lighten it. Then fold in the remaining whites until just blended; don’t overmix or you’ll deflate the magic.
- 07Pour the batter into the prepared dish and smooth the top. Bake on the center rack for 20 to 25 minutes, until puffed and golden brown.
- 08Remove from oven, dust with powdered sugar, and drizzle with honey. Serve immediately with fresh berries.
