Today we’re taking the humble banana and pumping it up, literally. This soufflé merges French technique with a pancake’s soul, combining protein powder and banana for a dessert that’s both science-forward and spoonable.

    Preheat your oven to 375°F. Generously butter a 2-quart round baking dish or soufflé dish, making sure to get all the way up the sides.

    Separate the eggs, placing the yolks in a large bowl and the whites in a clean, dry mixing bowl.

    To the yolks, add mashed banana, milk, vanilla extract, and lemon juice. Whisk until smooth.

    Add the protein powder, flour, sugar, and salt to the banana mixture. Stir until just combined and no dry spots remain.

    Using electric beaters or a sturdy whisk, beat the egg whites to soft peaks.

    Gently fold one third of the whipped egg whites into the banana batter to lighten it. Then fold in the remaining whites until just blended; don’t overmix or you’ll deflate the magic.

    Pour the batter into the prepared dish and smooth the top. Bake on the center rack for 20 to 25 minutes, until puffed and golden brown.

    Remove from oven, dust with powdered sugar, and drizzle with honey. Serve immediately with fresh berries.
