- 01In a large mixing bowl, combine rice vinegar, sugar, soy sauce, sesame oil, and kosher salt. Whisk until the sugar dissolves.
- 02Add the pickle cucumbers, cherry tomatoes, and diced red onion to the dressing. Toss to combine, making sure all the vegetables are coated.
- 03Cover the bowl and let the mixture stand at room temperature for 20 minutes, tossing once halfway through.
- 04Drain off most of the excess liquid, leaving just enough to keep the slaw juicy but not soupy.
- 05Transfer the slaw to a serving platter. Sprinkle with toasted sesame seeds and chopped cilantro just before serving.
- 06Taste and season with extra salt or a dash more vinegar if needed.
