Here’s the American backyard classic, downsized and up-leveled: juicy BBQ-sauced ground beef topped with jammy caramelized onions, tucked into toasted slider buns. You’ll master the art of fast-caramelizing onions and learn why finishing with BBQ sauce keeps the beef tender instead of dry.

Instructions

  1. 01
Heat olive oil in a large skillet over medium heat. Add the sliced onions and kosher salt, stirring to coat. Cook, stirring every 1–2 minutes, until onions are deeply golden and very soft, about 12–14 minutes.
  2. 02
While onions cook, season ground beef with black pepper. Form into 8 equal balls (about 2 ounces each), then gently flatten into thick patties. Set aside.
  3. 03
Once onions are caramelized, transfer them to a bowl and wipe out the skillet.
  4. 04
Melt 1 tablespoon butter in the skillet over medium-high. Add slider buns, cut side down, and toast for 1–2 minutes until golden. Transfer buns to a platter.
  5. 05
Add remaining 1 tablespoon butter to the skillet. Place beef patties in the pan and cook for 2–3 minutes per side, until just cooked through.
  6. 06
Lower the heat to medium. Pour BBQ sauce over the patties and gently turn them to coat. Let simmer for 1 minute so the sauce thickens and clings.
  7. 07
To assemble, place a beef patty on the bottom half of each bun. Top with caramelized onions and a few pickle chips. Cap with the top bun and serve warm.
