    Preheat your oven to 400°F. Line a baking sheet with parchment paper.

    Slice a thin lid off the top of each bagel, then hollow out the centers, leaving a sturdy 1/2-inch shell.

    Brush the inside and cut edges of each bagel with olive oil. Arrange on the prepared baking sheet.

    In a mixing bowl, combine shredded bbq rib meat, cream cheese, cheddar cheese, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and smoked paprika. Mix until well combined and creamy.

    Fill each bagel cavity generously with the rib-cheese mixture, mounding slightly.

    Bake stuffed bagels for 15 to 18 minutes until the cheese is bubbly and the bagel edges are golden.

    While the bagels bake, make the salsa: In a bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir well.
