Brazilian-Style Ground Beef and Onion Hash with Fried Egg

Inspired by Brazilian 'picadinho,' this hash is comfort food with a Latin American accent, built for both speed and flavor. We’ll sear, sauté, and finish with a sunny egg, all in under half an hour. (Bonus: you’ll learn why acid and fresh herbs matter at the very end.)

- 01Heat olive oil in a large skillet over medium-high until shimmering.
- 02Add ground beef and cook, breaking it up with a spatula, until well browned and no longer pink, about 4–5 minutes.
- 03Stir in the diced onion and cook until soft and golden, about 3 minutes.
- 04Add minced garlic, cumin, and smoked paprika. Sauté for 30 seconds until fragrant.
- 05Stir in tomato paste and let it darken for one minute.
- 06Pour in the beef broth, scraping up any browned bits. Simmer until most of the liquid evaporates, about 3–4 minutes.
- 07Season with kosher salt and black pepper. Taste and adjust as needed.
- 08Reduce heat to medium-low. Make four small wells in the hash, then crack an egg into each well. Cover and cook until eggs are just set but yolks are still runny, about 3–4 minutes.
- 09Drizzle red wine vinegar over the hash and sprinkle with fresh parsley.
- 10Serve immediately, scooping a portion of hash and a fried egg onto each plate.
