When you have just pasta, olive oil, and butter, you get a crash course in Italian minimalism and the science of emulsion. This recipe turns pantry staples into an elegant dinner by focusing on technique and timing.

    Bring a large pot of water to a rolling boil. Add a heaping tablespoon of salt, then the pasta. Cook until just al dente according to package directions.

    Reserve 1 cup of pasta water, then drain the pasta.

    Return the pot to medium-low heat and add the olive oil and butter. Let the butter melt completely and just begin to foam, swirling occasionally.

    Sprinkle in the paprika and black pepper and sauté for 30 seconds until fragrant.

    Add the drained pasta to the pot and toss vigorously to coat. Drizzle in 1/3 cup reserved pasta water, stirring rapidly until the sauce lightly clings to each noodle.

    Taste and season with more salt if needed, then serve immediately.
