Herb's take

Sometimes dinner is a lesson in restraint. Tonight, we're taking a minimalist Italian approach and coaxing maximum flavor from just pasta, butter, olive oil, and a supporting cast of pantry spices.

Instructions

  1. 01
Bring a large pot of water to a boil. Generously season the water with salt (about 1 tbsp per 4 quarts).
  2. 02
Add the pasta and cook according to package directions until just al dente. Reserve 1/2 cup of the pasta cooking water before draining.
  3. 03
While the pasta cooks, heat the olive oil and butter together in a large skillet over medium heat until the butter is melted and bubbly.
  4. 04
Add the paprika and black pepper to the skillet. Stir and let them bloom for 30 seconds to a minute, just until aromatic.
  5. 05
Add the drained pasta to the skillet and toss to coat in the butter-oil mixture. If it seems dry, add a splash or two of the reserved pasta water until the noodles are shiny and lightly sauced.
  6. 06
Taste and adjust seasoning with more salt and black pepper as needed. Serve immediately.
