- 01Preheat oven to 250°F. Line a rimmed baking sheet with parchment paper.
- 02In a medium saucepan over medium heat, melt the butter. Stir in brown sugar, corn syrup, and 1/2 cup heavy cream. Bring to a boil, stirring constantly.
- 03Boil for 4 minutes without stirring. Remove from heat, then stir in 1 teaspoon vanilla extract and kosher salt.
- 04Immediately pour the hot caramel over the popcorn in a large mixing bowl. Toss gently to coat all kernels.
- 05Spread the caramel-coated popcorn out on the prepared baking sheet. Bake for 20 minutes, stirring halfway through, until crisp. Cool completely.
- 06While popcorn cools, whisk 1 cup heavy cream, confectioners’ sugar, and remaining 1 teaspoon vanilla extract in a medium bowl until stiff peaks form.
- 07To assemble, layer brownie cubes in the bottom of 4 parfait glasses. Add a scoop of caramel popcorn, then a generous spoonful of whipped cream. Repeat layering until glasses are full, ending with a dollop of whipped cream and a final flourish of caramel popcorn on top.
- 08Serve immediately for maximum crunch and contrast.
