This Italian-inspired dinner celebrates the allium family in its most glorious forms: slowly caramelized onions and garlic. You'll learn the art of patience as the onions go from sharp to sweet, and a tangy balsamic finish ties it all together.

    Heat the olive oil in a large skillet over medium heat. Add the onions and kosher salt. Cook, stirring occasionally, until the onions soften and begin to turn golden, about 8 minutes.

    Reduce heat to medium-low and continue cooking the onions, stirring every few minutes, until deeply golden and caramelized, 18 to 22 minutes longer.

    Stir in the sliced garlic and cook until fragrant and lightly golden, 2 to 3 minutes.

    Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook until just al dente, reserving 3/4 cup of pasta cooking water before draining.

    Add the butter to the onions and garlic, stirring until melted. Add the drained pasta to the skillet along with 1/2 cup reserved pasta water. Toss to combine and emulsify the sauce over medium heat. Add extra pasta water if the mixture seems dry.

    Off the heat, drizzle the balsamic vinegar over the pasta and toss again.

    Season with black pepper and adjust salt if needed. Divide among plates, then shower with parsley and Parmesan cheese.
