We're flipping tradition upside-down, literally, with this French-inspired tart. You'll master the art of caramelizing onions and learn why avocados deserve a place in warm, savory pastries.

Instructions
- 01Preheat your oven to 400°F.
- 02Melt the butter with olive oil in a 10-inch oven-safe skillet over medium heat. Add the sliced red onions and cook, stirring occasionally, until softened and beginning to turn golden, about 10 minutes.
- 03Sprinkle the sugar evenly over the onions and continue cooking until they are deeply caramelized and sticky, 10-12 minutes more.
- 04Drizzle in the balsamic vinegar, add the salt and pepper, and stir until the onions are glossy and well coated. Remove the skillet from the heat and let it cool for 3 minutes.
- 05Fan the avocado slices in a decorative pattern on top of the onions, lightly pressing them into the mixture.
- 06Unfold the puff pastry and roll it out slightly to ensure it covers the skillet with an extra half inch overhang. Lay the pastry over the avocado and onions, tucking the edges down snugly between the filling and the skillet.
- 07Brush the pastry with the beaten egg and sprinkle with thyme leaves.
- 08Bake in the oven for 22-25 minutes, until the pastry is puffed and golden brown.
- 09Remove the skillet from the oven and let it rest for 5 minutes. Run a thin knife around the edge to loosen. Place a large plate over the skillet and invert the tart onto the plate in one swift motion.
- 10Cut into wedges and serve warm, garnished with a few extra thyme leaves if desired.
