Shishito peppers take a star turn on the grill, their smoky char meeting a tangy cilantro lime dip that's a total flavor fireworks show. You'll get a masterclass in getting the perfect pepper blister, plus a sauce that might just steal the spotlight.

- 01Preheat a grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 10 minutes to avoid splintered pepper tragedy.
- 02Thread the shishito peppers onto skewers, packing them snug but not squished.
- 03Brush peppers all over with olive oil, then season with kosher salt and black pepper.
- 04Grill the skewers for 2 to 3 minutes per side, turning occasionally, until peppers are blistered and charred in spots.
- 05While peppers grill, combine sour cream, mayonnaise, cilantro, lime zest, lime juice, and minced garlic in a small bowl. Stir until smooth and bright green.
- 06Taste the dip and adjust seasoning if needed.
- 07Transfer charred shishito skewers to a platter and serve immediately with the cilantro lime dip on the side.
