Chicken and Tomato Pasta with a Garlic-Infused Kick

If you ever wanted proof that chicken, pasta, and tomatoes can rule the dinner table with just basic pantry backup, this Italian-inspired dish delivers. We’ll coax out maximum flavor by letting garlic and onions do their aromatic thing, then unite everything under a simple tomato sauce.

- 01Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Drain and set aside.
- 02Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and just cooked through, about 6-8 minutes. Transfer chicken to a plate.
- 03Add the remaining 1 tablespoon olive oil to the skillet. Add the diced onion and a pinch of salt, then cook for 3-4 minutes until softened.
- 04Add the minced garlic and cook for 1 minute, stirring frequently, until fragrant.
- 05Stir in the diced tomatoes, dried oregano, paprika, and sugar. Simmer for 10-12 minutes, stirring occasionally, until tomatoes have broken down and the mixture is saucy.
- 06Return the cooked chicken to the skillet with the tomato sauce. Simmer for 3 minutes to combine flavors. Taste and adjust salt and pepper.
- 07Add the drained pasta to the skillet and toss until everything is well coated and heated through.
