- 01Combine the hearts of palm, tomato, cucumber, onion, and capers in a large mixing bowl.
- 02In a separate bowl, whisk together the olive oil, lemon juice, orange juice, and red wine vinegar. Season with kosher salt and black pepper.
- 03Pour the marinade over the hearts of palm mixture and toss gently to coat.
- 04Cover the bowl and refrigerate for at least 20 minutes to let the flavors meld and the hearts of palm marinate.
- 05Right before serving, fold in the avocado and cilantro.
- 06Taste and adjust seasoning if needed, then spoon the ceviche into small bowls or glasses.
- 07Serve chilled with slices of crusty Italian bread on the side.
