- 01Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 02Sprinkle the grated parmesan in 2-inch rounds on the prepared baking sheet, spacing them an inch apart. Bake until golden and crisp, about 5 to 7 minutes. Let cool fully, then gently peel off the crisps.
- 03Heat the vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- 04Add the green beans and stir-fry for 3 minutes until they begin to blister and char.
- 05Push the green beans to the sides, add garlic to the center, and sauté for 30 seconds until fragrant but not brown.
- 06Add soy sauce, rice vinegar, and sugar. Stir-fry everything together for another 1 to 2 minutes, until the beans are just tender and glossy.
- 07Transfer the beans to a serving platter. Season with salt and pepper to taste.
- 08Garnish generously with parmesan crisps, crumbling a few over the top for maximum crunch. Serve immediately.
