Think of this as guacamole’s elegant cousin, where the blender does the mashing and tangy marinated onions steal the show. We’re leaning into classic Mexican flavor pairings while exploring texture contrast and a quick-pickling trick for depth.

- 01In a small bowl, combine the thinly sliced red onion, 1 tablespoon of lime juice, white vinegar, sugar, and 1/4 teaspoon kosher salt. Toss well and set aside for at least 20 minutes, stirring occasionally.
- 02Halve the avocados, remove the pits, and scoop the flesh into a food processor or blender.
- 03Add the remaining 2 tablespoons lime juice, 1/2 cup cold water, chopped cilantro, remaining 1/2 teaspoon salt, olive oil, and black pepper to the avocado. Blend until completely smooth, scraping down the bowl as needed.
- 04Taste the purée and adjust salt or lime juice if desired.
- 05Spread the avocado purée evenly onto a serving plate or shallow bowl. Spoon the drained marinated red onions over the top. Garnish with extra cilantro leaves.
- 06Serve chilled as a vibrant side alongside grilled meats, tacos, or roasted vegetables.
