This Vietnamese-inspired soup is simplicity at its aromatic best. You'll learn how to coax maximum flavor out of lemongrass and ginger for a crystal-clear broth that's both soothing and surprisingly complex.

Instructions
- 01Place the lemongrass stalks and ginger slices in a medium saucepan with the chicken broth and smashed garlic. Bring to a gentle boil, then immediately reduce to a low simmer.
- 02Simmer uncovered for 20 minutes to fully infuse the broth with the lemongrass and ginger flavors.
- 03Strain the broth through a fine mesh sieve into a clean pot. Discard the solids.
- 04Stir in the fish sauce, soy sauce, and sugar. Bring the clear broth back to a low simmer.
- 05Add the white parts of the green onions and cook for 1 minute until just softened.
- 06Ladle the soup into warm bowls. Top each with a generous sprinkle of green onion greens and cilantro.
- 07Serve immediately with lime wedges on the side to squeeze over each bowl as desired.
