Instructions
- 01Combine the rice, coconut milk, water, and salt in a medium saucepan. Bring to a simmer over medium heat, stirring occasionally.
- 02Reduce heat to low, cover, and cook for 15 minutes, stirring once or twice to prevent sticking.
- 03Uncover, stir in the honey and cardamom, and continue to cook over low heat for 3 to 4 minutes until thick and creamy.
- 04Remove from heat. Let pudding rest uncovered for 3 minutes to allow it to thicken slightly as it cools. Taste and add a pinch more salt if needed.
- 05Spoon the warm pudding into bowls and top each with fresh mango slices. Serve immediately.
