Creamy Mediterranean-Style Chicken Pasta Stir-Fry with Onion and Garlic

Tonight, we’re stir-frying our way through the Mediterranean coast, proof that pasta needn’t always be boiled-and-baked to shine. This dish lets you master the art of finishing pasta in the pan, stealing some stir-fry thunder for Italy.

- 01Bring a large pot of salted water to a boil. Cook the pasta until just shy of al dente, about 1 minute less than package directions. Drain, reserving 1/2 cup pasta water.
- 02While the pasta cooks, heat 1 1/2 tablespoons olive oil in a large skillet over medium-high heat. Add the chicken and half the salt and pepper. Stir-fry until golden and just cooked through, about 5 minutes. Transfer chicken to a plate.
- 03Reduce heat to medium. Add remaining olive oil to the same skillet, then add sliced onion. Saute until softened and just starting to turn golden, about 4 minutes.
- 04Add butter and minced garlic to the skillet with the onions. Stir constantly until the garlic is fragrant but not browned, 1 minute.
- 05Return the chicken and any juices to the pan. Toss to combine.
- 06Add drained pasta to the skillet. Pour in cooking cream, remaining salt and pepper, and about 1/4 cup reserved pasta water. Stir and cook for 2-3 minutes, until the sauce thickens and pasta finishes cooking.
- 07Taste and adjust seasoning if needed. If the sauce is too thick, add a splash more pasta water.
- 08Finish with a final drizzle of olive oil and sprinkle with fresh parsley before serving.
