- 01Line an 8-inch square pan with parchment, leaving an overhang for easy removal later.
- 02In a large bowl, combine the crushed nilla wafers and golden grahams cereal.
- 03In a small saucepan over low heat, melt the coconut oil. Add the heavy cream and heat, stirring, until just steaming but not boiling.
- 04Remove from heat. Whisk in the powdered sugar and cinnamon until smooth and glossy.
- 05Pour the coconut oil mixture over the cereal and wafer blend. Fold until everything is evenly coated.
- 06Add the chopped peanuts and mix to distribute them throughout.
- 07Spoon the mixture into the prepared pan. Press down firmly with the back of a spatula to compact and level the surface.
- 08Chill in the refrigerator for at least 1 hour, or until firm.
- 09Lift out of the pan using the parchment overhang. Cut into 8 bars and serve cold or at cool room temperature.
