Creamy Peanut Butter Oatmeal Layered Parfaits with Fruit and Granola

Inspired by classic American breakfast parfaits, this dish brings together the comforting heartiness of cooked oats and the rich creaminess of peanut butter. You'll master the art of contrasting textures, plus, you’ll discover why peanut butter swirls and hot oats are a match made in (breakfast) heaven.

    In a medium saucepan, combine the rolled oats, milk, and salt. Bring to a gentle simmer over medium heat, stirring occasionally.

    Cook the oats for 8 to 10 minutes until creamy but still textured. Remove from heat.

    While oats are hot, stir in 1/4 cup of the peanut butter, maple syrup, and vanilla extract until fully incorporated.

    Allow the oatmeal to cool for 10 to 15 minutes, stirring occasionally to prevent a skin from forming.

    In each of four parfait glasses, layer 1/4 cup of the peanut butter oatmeal as the base.

    Top with 2 tablespoons of Greek yogurt, a spoonful of strawberries and banana slices, and a sprinkle of granola.

    Repeat the layers with the remaining peanut butter oatmeal, yogurt, fruit, and granola, finishing with fruit and granola on top.

    Warm the remaining 1/4 cup peanut butter in the microwave for 20 seconds until pourable, then drizzle it over the parfaits before serving.

    Serve immediately, or refrigerate for up to 2 hours if you prefer a chilled parfait.
