Creamy Peanut Butter Oatmeal Layered Parfaits with Fruit and Granola

Inspired by classic American breakfast parfaits, this dish brings together the comforting heartiness of cooked oats and the rich creaminess of peanut butter. You'll master the art of contrasting textures, plus, you’ll discover why peanut butter swirls and hot oats are a match made in (breakfast) heaven.

- 01In a medium saucepan, combine the rolled oats, milk, and salt. Bring to a gentle simmer over medium heat, stirring occasionally.
- 02Cook the oats for 8 to 10 minutes until creamy but still textured. Remove from heat.
- 03While oats are hot, stir in 1/4 cup of the peanut butter, maple syrup, and vanilla extract until fully incorporated.
- 04Allow the oatmeal to cool for 10 to 15 minutes, stirring occasionally to prevent a skin from forming.
- 05In each of four parfait glasses, layer 1/4 cup of the peanut butter oatmeal as the base.
- 06Top with 2 tablespoons of Greek yogurt, a spoonful of strawberries and banana slices, and a sprinkle of granola.
- 07Repeat the layers with the remaining peanut butter oatmeal, yogurt, fruit, and granola, finishing with fruit and granola on top.
- 08Warm the remaining 1/4 cup peanut butter in the microwave for 20 seconds until pourable, then drizzle it over the parfaits before serving.
- 09Serve immediately, or refrigerate for up to 2 hours if you prefer a chilled parfait.
