    Preheat your oven to 425°F with a rack in the upper third. Grease a 2-quart baking dish with a little olive oil or butter.

    Bring a large pot of salted water to a boil and cook the penne 2 minutes less than package directions for al dente. Drain and set aside.

    In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add the flour and cook, whisking constantly, for 2 minutes to form a pale roux.

    Gradually whisk in the milk, then the pickle brine and heavy cream. Bring to a simmer, whisking, until slightly thickened, about 3 to 4 minutes.

    Off the heat, stir in the Parmesan and pecorino until melted and smooth. Season with black pepper.

    Add the drained penne to the sauce, tossing to coat evenly. Pour into the prepared baking dish and smooth the top.
