- 01Preheat a large skillet over high heat until just shy of smoking, about 2 minutes.
- 02Add olive oil and tilt the pan to coat. Immediately add the shishito peppers in a single layer.
- 03Cook peppers undisturbed for 2 minutes, then toss or stir. Continue to blister for 5-6 minutes, tossing occasionally, until almost every pepper has deep brown spots.
- 04Add the garlic and sauté for 30 seconds, just until fragrant.
- 05Sprinkle in the Cajun seasoning and smoked paprika. Toss to coat, letting the spices bloom in the hot oil for another 30 seconds.
- 06Remove from the heat. Add the lemon zest and half the lemon juice, then season with kosher salt. Toss well.
- 07Transfer to a platter. Serve hot, with extra lemon wedges if desired.
