- 01Place the almonds in a shallow dish. In a second dish, add the flour. In a third, beat the eggs with the milk.
- 02Pat the pork chops dry with paper towels. Season both sides with 1 1/2 tsp salt, 3/4 tsp pepper, smoked paprika, and garlic powder.
- 03Dredge each chop in the flour, shaking off excess, then dip in the egg mixture, and finally press into the chopped almonds until well coated on all sides.
- 04Heat the oil in a large skillet over medium heat until shimmering.
- 05Add the pork chops and cook for 4–5 minutes per side until deep golden brown and the internal temperature hits 145°F. Transfer to a wire rack or plate.
- 06Pour off excess oil and return skillet to medium-low. Melt butter, then whisk in honey and vinegar. Simmer for 1 minute until slightly thickened.
- 07Return pork chops to the pan. Spoon glaze over each chop and cook 1 minute, flipping to coat.
- 08Sprinkle with thyme and a final pinch of salt. Serve immediately.
