    Place the almonds in a shallow dish. In a second dish, add the flour. In a third, beat the eggs with the milk.

    Pat the pork chops dry with paper towels. Season both sides with 1 1/2 tsp salt, 3/4 tsp pepper, smoked paprika, and garlic powder.

    Dredge each chop in the flour, shaking off excess, then dip in the egg mixture, and finally press into the chopped almonds until well coated on all sides.

    Heat the oil in a large skillet over medium heat until shimmering.

    Add the pork chops and cook for 4–5 minutes per side until deep golden brown and the internal temperature hits 145°F. Transfer to a wire rack or plate.

    Pour off excess oil and return skillet to medium-low. Melt butter, then whisk in honey and vinegar. Simmer for 1 minute until slightly thickened.

    Return pork chops to the pan. Spoon glaze over each chop and cook 1 minute, flipping to coat.

    Sprinkle with thyme and a final pinch of salt. Serve immediately.
