Hash isn’t just for potatoes, tonight, the unlikely duo of avocado and onion gets the skillet treatment. Inspired by the improvisational spirit of American diner classics, this dish shows how creamy avocado can hold its own in a hot pan when paired with the right technique and seasonings.

    Heat a large skillet over medium-high heat and add 2 tablespoons of oil. Once shimmering, add the chopped onion and a pinch of salt. Sauté for 5-7 minutes, stirring occasionally, until onions are soft and beginning to brown.

    Sprinkle in the paprika and black pepper, and cook for 30 seconds, stirring constantly, until fragrant.

    Add the diced avocado and remaining tablespoon of oil. Let the mixture cook undisturbed for 2-3 minutes so the avocado gets some golden, crispy edges. Gently flip and cook another 2 minutes, being careful not to mash the avocado.

    Taste and season with more salt and black pepper if needed.

    If desired, top each serving with a fried or poached egg. Serve immediately for maximum crispiness.
