- 01Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- 02Set up a breading station: place cornstarch in one shallow bowl, beaten eggs in a second, and a mixture of flour and bagel spices in a third.
- 03Coat each tofu steak in cornstarch, dip in egg, then dredge in the flour-bagel spice mix. Press gently to adhere.
- 04Arrange coated tofu on the prepared baking sheet and drizzle with 1/4 cup neutral oil.
- 05Bake for 25–30 minutes, flipping halfway through, until golden and crisp.
- 06While tofu bakes, heat 1 tablespoon neutral oil in a small saucepan over medium heat. Add ginger garlic paste and stir for 1 minute until fragrant.
- 07Add soy sauce, honey, and rice vinegar to the saucepan. Simmer for 2–3 minutes until glossy and slightly thickened. Remove from heat and stir in sesame oil.
- 08Brush the baked tofu steaks generously with the ginger garlic glaze.
- 09Transfer tofu to plates, garnish with sliced scallions, and serve immediately.
