    Preheat the oven to 425°F. Line a baking sheet with parchment paper.

    Set up a breading station: place cornstarch in one shallow bowl, beaten eggs in a second, and a mixture of flour and bagel spices in a third.

    Coat each tofu steak in cornstarch, dip in egg, then dredge in the flour-bagel spice mix. Press gently to adhere.

    Arrange coated tofu on the prepared baking sheet and drizzle with 1/4 cup neutral oil.

    Bake for 25–30 minutes, flipping halfway through, until golden and crisp.
