Crispy Bruschetta with Zesty Mediterranean Sardine Spread

Inspired by Spanish tapas, this bruschetta turns humble tinned sardines into a vibrant, shareable dinner starter. You'll learn the magic of balancing bold fish with fresh herbs, lemon, and good olive oil, plus the top-secret reason you always add acid last.

- 01Preheat your oven to 425°F. Arrange baguette slices on a baking sheet and brush both sides with 2 tablespoons of olive oil. Bake for 7-9 minutes, flipping halfway, until golden and crisp.
- 02While the bread is still warm, gently rub one side of each slice with a garlic clove. Discard any remaining garlic bits.
- 03In a medium bowl, mash the drained sardines with a fork until mostly smooth but still a bit chunky.
- 04Add the remaining 1/4 cup olive oil, lemon zest, 2 teaspoons lemon juice (reserve the rest), parsley, chives, capers, smoked paprika, black pepper, and 1 minced garlic clove to the sardines. Mix thoroughly.
- 05Taste and add a pinch of salt if needed. If you like more acidity, add a bit more reserved lemon juice.
- 06Spoon a heaping tablespoon of sardine spread onto each toasted baguette slice. Arrange bruschetta on a platter.
- 07Drizzle with extra olive oil and sprinkle with a final dusting of chopped parsley and chives. Serve immediately.
