Inspired by the Caribbean’s affection for bold fruit and creamy contrasts, this parfait is a tropical vacation in a glass. Along the way, you’ll learn why chilling your bowl is the unsung hero of whipped coconut cream.

Instructions
- 01Place a medium metal mixing bowl and the beaters of an electric mixer in the freezer for at least 15 minutes.
- 02Add chilled savoy coconut cream to the cold bowl. Beat on high speed until soft peaks form, about 2 to 3 minutes.
- 03Add confectioners’ sugar, vanilla extract, and a pinch of kosher salt. Continue beating until the cream is thick and holds medium peaks. Set aside in the refrigerator.
- 04In a food processor, combine frozen pineapple, frozen mango, lime juice, and remaining pinch of salt. Pulse until the mixture is creamy and smooth with an almost sorbet-like texture.
- 05To assemble, spoon half the pineapple-mango mixture into the bottom of four clear glasses. Top each with a generous spoonful of whipped coconut cream.
- 06Repeat layers with the remaining fruit and cream. Smooth the tops for maximum visual payoff.
- 07Serve immediately for maximum contrast between icy fruit and airy cream, or chill for up to 30 minutes before serving.
