Inspired by the Caribbean’s affection for bold fruit and creamy contrasts, this parfait is a tropical vacation in a glass. Along the way, you’ll learn why chilling your bowl is the unsung hero of whipped coconut cream.

Instructions

    Place a medium metal mixing bowl and the beaters of an electric mixer in the freezer for at least 15 minutes.

    Add chilled savoy coconut cream to the cold bowl. Beat on high speed until soft peaks form, about 2 to 3 minutes.

    Add confectioners’ sugar, vanilla extract, and a pinch of kosher salt. Continue beating until the cream is thick and holds medium peaks. Set aside in the refrigerator.

    In a food processor, combine frozen pineapple, frozen mango, lime juice, and remaining pinch of salt. Pulse until the mixture is creamy and smooth with an almost sorbet-like texture.

    To assemble, spoon half the pineapple-mango mixture into the bottom of four clear glasses. Top each with a generous spoonful of whipped coconut cream.

    Repeat layers with the remaining fruit and cream. Smooth the tops for maximum visual payoff.

    Serve immediately for maximum contrast between icy fruit and airy cream, or chill for up to 30 minutes before serving.
