Taking a cue from American takeout classics, this broccoli side dish gets an umami-laden upgrade with garlic and sesame oil. We’ll nail that irresistible crisp-tender texture and learn why a hot pan is broccoli’s best friend.

- 01Heat a large skillet or wok over medium-high heat until hot. Add the neutral oil and swirl to coat.
- 02Toss in the broccoli florets and stir-fry for 3 minutes, letting the edges pick up some color.
- 03Add the minced garlic and cook for 30 seconds, stirring constantly to avoid burning.
- 04Pour in the soy sauce and 2 tablespoons of water. Stir-fry another 2 to 3 minutes, until the broccoli is crisp-tender and the liquid has mostly evaporated.
- 05Drizzle in the sesame oil and rice vinegar, tossing to coat.
- 06Transfer broccoli to a serving platter. Sprinkle with toasted sesame seeds and sliced scallions.
- 07Season with salt and pepper to taste, if desired. Serve immediately.
