Inspired by Italian brodo and French consommé, this dish is all about infusing flavor, clarifying broth, and letting humble ingredients shine. You’ll practice the art of clarification and end up with a soul-warming, aromatic dinner that feels like a culinary magic trick.

- 01In a large stockpot, heat olive oil over medium heat. Add quartered onions and smashed garlic. Sauté until onions are translucent and just beginning to color, about 8 minutes.
- 02Pour in the water and bring to a gentle simmer. Skim off any foam that rises, and let simmer uncovered for 25 minutes.
- 03Strain out the onions and garlic, reserving the liquid in a clean saucepan. Discard solids or save for another use.
- 04Whisk the egg whites in a bowl until frothy. Gently whisk them into the strained hot broth. Return the pot to medium-low heat and do NOT stir further. Let it heat gently for 15 minutes as the whites float up, trapping impurities and clarifying the broth.
- 05Ladle the clarified broth through a fine mesh strainer lined with damp paper towels or cheesecloth into a clean pot, discarding the raft. Taste and season generously with salt and pepper.
- 06Meanwhile, cook the angel hair pasta in a separate pot of boiling salted water according to package directions. Drain and portion noodles among serving bowls.
- 07Ladle hot consommé over the pasta in each bowl. Sprinkle with fresh parsley to finish. Serve immediately.
