Instructions
- 01In a small bowl, mix together ginger garlic paste, olive oil, lemon zest, lemon juice, paprika, brown sugar, kosher salt, and black pepper until you have a thick marinade.
- 02Loosen the skin over the chicken breasts and thighs using your fingers, being careful not to tear it. Rub half of the marinade directly under the skin and the rest all over the outside of the bird.
- 03Sprinkle the entire surface of the chicken evenly with the bagel spices, pressing gently so they stick. Reserve a pinch for garnish.
- 04Place the chicken breast-side up on a rack in a roasting pan. Let it sit uncovered at room temperature for 30 minutes to help dry the skin.
- 05Preheat your oven to 425°F.
- 06Roast the chicken for 20 minutes, then reduce the oven temperature to 375°F. Continue roasting for 40–50 minutes more, or until the thickest part of the thigh registers 165°F with an instant-read thermometer.
- 07Transfer the chicken to a cutting board and let it rest for 15 minutes before carving.
- 08Carve the chicken, arrange on a platter, and drizzle with any pan juices. Sprinkle with the reserved bagel spices before serving.
