Herb's take

Inspired by Mexican street-side grilling, this dish turns humble avocados and red onions into smoky, zesty showstoppers. You'll learn why grilling avocados is secretly brilliant and how lime-cilantro glaze makes everything sing.

Instructions

  1. 01
Soak 8 wooden skewers in water for at least 20 minutes to prevent burning.
  2. 02
In a bowl, whisk together lime juice, olive oil, chopped cilantro, salt, pepper, cumin, and smoked paprika until evenly combined.
  3. 03
Reserve 2 tablespoons of the lime-cilantro glaze in a small dish for finishing.
  4. 04
Gently toss avocado chunks and red onion pieces with the remaining glaze, coating well but taking care not to break up the avocado.
  5. 05
Thread avocado and red onion alternately onto the skewers, leaving a bit of space between each piece for even charring.
  6. 06
Preheat a grill or grill pan over medium-high heat. Oil the grates well.
  7. 07
Grill skewers for 2-3 minutes per side, turning gently, until the onions are nicely charred and the avocados have grill marks but are still holding their shape.
  8. 08
Transfer skewers to a platter and immediately brush with the reserved lime-cilantro glaze for a fresh, vibrant finish.
  9. 09
Serve warm as a standout side dish.
