- 01Soak 8 wooden skewers in water for at least 20 minutes to prevent burning.
- 02In a bowl, whisk together lime juice, olive oil, chopped cilantro, salt, pepper, cumin, and smoked paprika until evenly combined.
- 03Reserve 2 tablespoons of the lime-cilantro glaze in a small dish for finishing.
- 04Gently toss avocado chunks and red onion pieces with the remaining glaze, coating well but taking care not to break up the avocado.
- 05Thread avocado and red onion alternately onto the skewers, leaving a bit of space between each piece for even charring.
- 06Preheat a grill or grill pan over medium-high heat. Oil the grates well.
- 07Grill skewers for 2-3 minutes per side, turning gently, until the onions are nicely charred and the avocados have grill marks but are still holding their shape.
- 08Transfer skewers to a platter and immediately brush with the reserved lime-cilantro glaze for a fresh, vibrant finish.
