Grilled Avocado and Red Onion Tacos with Smoky Chipotle Crema

If you thought avocados were only for guac, let's rethink that with a little Mexican live-fire magic. We'll grill avocados and red onions until smoky and sweet, then tuck them into tortillas with a crema that delivers a gentle chipotle kick.

Instructions
- 01Preheat a grill or grill pan over medium-high heat. Brush avocado halves and red onion rings with olive oil on all sides.
- 02Sprinkle the avocado and onion with kosher salt and black pepper before grilling.
- 03Grill red onion rings for 3 to 4 minutes per side until charred and softened. Transfer to a plate.
- 04Place avocados cut-side down on the grill. Grill for 3 to 4 minutes until you see deep grill marks. Remove and let cool slightly.
- 05While the veggies grill, stir together Mexican crema, chipotle in adobo, and fresh lime juice in a small bowl until smooth.
- 06Peel the skin from the grilled avocado halves and slice each half into quarters.
- 07Warm corn tortillas directly on the grill for 30 seconds per side until pliable.
- 08To assemble, layer slices of grilled avocado and red onion in each tortilla. Drizzle generously with chipotle crema and finish with chopped cilantro.
- 09Serve immediately while everything is warm and the crema is still cool for maximum contrast.
