Herb's take

Inspired by the grilled breads and herb-forward flavors of Northern Europe, this dinner turns a bagel into a smoky, savory canvas for crispy BBQ rib meat and a drizzle of fresh herb oil. You'll learn how to craft an aromatic oil infusion and transform leftover rib meat into a crunchy, craveable topping.

Instructions

  1. 01
Combine the olive oil, smashed garlic, parsley, dill, chives, and lemon zest in a small saucepan over low heat. Warm gently for 8 minutes until aromatic, then remove from heat and let steep while you prepare the rest.
  2. 02
Preheat a grill or grill pan over medium-high heat.
  3. 03
Brush the cut sides of the bagel halves with 1 tablespoon of the infused herb oil.
  4. 04
Grill the bagel halves, cut side down, for 2 to 3 minutes or until nicely charred and toasted. Flip and grill the other side for 1 minute. Set aside.
  5. 05
In a large skillet, melt the butter over medium-high heat. Add the shredded BBQ rib meat in an even layer. Cook without stirring for 2 minutes to allow the edges to crisp, then toss and continue to cook until crispy in spots, about 4 more minutes.
  6. 06
Strain the herb oil through a fine mesh sieve into a bowl, discarding the solids. Reserve.
  7. 07
Arrange grilled bagel halves on a platter, cut side up. Top evenly with the crispy BBQ rib crumble.
  8. 08
Drizzle each bagel half generously with the strained herb oil. Season with salt and pepper to taste.
  9. 09
Serve immediately, optionally with extra chopped herbs or a sprinkle of flaky salt.
