You'll learn how to craft an aromatic oil infusion and transform leftover rib meat into a crunchy, craveable topping.

- 01Combine the olive oil, smashed garlic, parsley, dill, chives, and lemon zest in a small saucepan over low heat. Warm gently for 8 minutes until aromatic, then remove from heat and let steep while you prepare the rest.
- 02Preheat a grill or grill pan over medium-high heat.
- 03Brush the cut sides of the bagel halves with 1 tablespoon of the infused herb oil.
- 04Grill the bagel halves, cut side down, for 2 to 3 minutes or until nicely charred and toasted. Flip and grill the other side for 1 minute. Set aside.
- 05In a large skillet, melt the butter over medium-high heat. Add the shredded BBQ rib meat in an even layer. Cook without stirring for 2 minutes to allow the edges to crisp, then toss and continue to cook until crispy in spots, about 4 more minutes.
- 06Strain the herb oil through a fine mesh sieve into a bowl, discarding the solids. Reserve.
- 07Arrange grilled bagel halves on a platter, cut side up. Top evenly with the crispy BBQ rib crumble.
- 08Drizzle each bagel half generously with the strained herb oil. Season with salt and pepper to taste.
- 09Serve immediately, optionally with extra chopped herbs or a sprinkle of flaky salt.
