Grilled Beef and Cherry Tomato Skewers Served with Chunky Avocado Salsa

Latin America meets the backyard barbecue in this lively dinner. You'll master marinating beef for tenderness, grilling juicy skewers, and whipping up a salsa that makes avocados and tomatoes sing.

- 01In a large bowl, mix 2 tablespoons olive oil, juice of 1 lime, garlic, cumin, smoked paprika, 1 teaspoon salt, and black pepper to make the marinade.
- 02Add the cubed flank steak to the marinade and toss well. Cover and refrigerate for at least 20 minutes, up to 2 hours.
- 03If using wooden skewers, soak them in water for at least 20 minutes.
- 04Thread marinated beef cubes and cherry tomatoes alternately onto skewers, starting and ending with beef.
- 05Preheat a grill or grill pan over medium-high heat and lightly oil the grates.
- 06Grill the skewers for 8-10 minutes, turning every 2-3 minutes, until the beef is medium-rare and tomatoes are blistered. Rest skewers for 5 minutes before serving.
- 07While the skewers rest, combine avocados, red onion, cilantro, jalapeño, remaining olive oil, juice of 1 lime, and 1/4 teaspoon salt in a medium bowl. Gently toss to combine.
- 08Serve skewers hot, with generous spoonfuls of avocado salsa on the side or over top.
