- 01In a large bowl, mix 2 tablespoons olive oil, juice of 1 lime, garlic, cumin, smoked paprika, 1 teaspoon salt, and black pepper to make the marinade.
- 02Add the cubed flank steak to the marinade and toss well. Cover and refrigerate for at least 20 minutes, up to 2 hours.
- 03If using wooden skewers, soak them in water for at least 20 minutes.
- 04Thread marinated beef cubes and cherry tomatoes alternately onto skewers, starting and ending with beef.
- 05Preheat a grill or grill pan over medium-high heat and lightly oil the grates.
- 06Grill the skewers for 8-10 minutes, turning every 2-3 minutes, until the beef is medium-rare and tomatoes are blistered. Rest skewers for 5 minutes before serving.
- 07While the skewers rest, combine avocados, red onion, cilantro, jalapeño, remaining olive oil, juice of 1 lime, and 1/4 teaspoon salt in a medium bowl. Gently toss to combine.
- 08Serve skewers hot, with generous spoonfuls of avocado salsa on the side or over top.
