We're taking filet mignon on a Korean vacation with this bulgogi-inspired grilling adventure. Slice your steaks thin, soak 'em in a sweet-savory marinade, and finish with a flash on the grill, the result is buttery beef with charred edges and bold flavors that play well with a sprinkle of scallions and sesame.

- 01Freeze the filet mignon steaks for 20 minutes until very firm but not frozen solid (this makes thin slicing much easier).
- 02While the steaks chill, stir together soy sauce, brown sugar, grated pear, minced garlic, grated ginger, sesame oil, neutral oil, and rice vinegar in a medium bowl.
- 03Remove the steaks from the freezer and slice as thinly as possible across the grain.
- 04Add the sliced filet to the marinade, tossing to coat every piece well. Marinate for 15 minutes at room temperature.
- 05Preheat your grill to high or heat a grill pan over high heat until smoking.
- 06Remove beef slices from the marinade and shake off excess. Discard remaining marinade.
- 07Oil the grill grates using tongs and a wadded paper towel dipped in neutral oil.
- 08Grill the beef in a single layer for 30-45 seconds per side, just until browned and lightly charred. Do this in batches if needed.
- 09Pile the grilled beef onto a platter, sprinkle with sliced scallions and toasted sesame seeds, and finish with black pepper.
- 10Serve immediately, family-style, with steamed rice or lettuce leaves if desired.
