We're taking filet mignon on a Korean vacation with this bulgogi-inspired grilling adventure. Slice your steaks thin, soak 'em in a sweet-savory marinade, and finish with a flash on the grill, the result is buttery beef with charred edges and bold flavors that play well with a sprinkle of scallions and sesame.

    Freeze the filet mignon steaks for 20 minutes until very firm but not frozen solid (this makes thin slicing much easier).

    While the steaks chill, stir together soy sauce, brown sugar, grated pear, minced garlic, grated ginger, sesame oil, neutral oil, and rice vinegar in a medium bowl.

    Remove the steaks from the freezer and slice as thinly as possible across the grain.

    Add the sliced filet to the marinade, tossing to coat every piece well. Marinate for 15 minutes at room temperature.

    Preheat your grill to high or heat a grill pan over high heat until smoking.

    Remove beef slices from the marinade and shake off excess. Discard remaining marinade.

    Oil the grill grates using tongs and a wadded paper towel dipped in neutral oil.

    Grill the beef in a single layer for 30-45 seconds per side, just until browned and lightly charred. Do this in batches if needed.
