- 01Pat the pork chops dry with paper towels and set aside.
- 02In a small bowl, combine the ground allspice, cumin, brown sugar, garlic powder, 1 teaspoon of the kosher salt, black pepper, and cayenne pepper.
- 03Rub the pork chops all over with 1 tablespoon of olive oil, then coat evenly with the spice mixture on both sides. Let them rest at room temperature for 15 minutes while you make the salsa.
- 04Meanwhile, make the mango salsa: In a medium bowl, mix the diced mango, red onion, red bell pepper, jalapeño, lime zest, and juice, remaining 1/4 teaspoon kosher salt, chopped cilantro, and honey. Toss until combined. Cover and refrigerate until ready to serve.
- 05Preheat a grill (or grill pan) over medium-high heat. Brush the grill grates with the remaining 1 tablespoon olive oil.
- 06Grill the pork chops for 4 to 5 minutes per side, or until they reach an internal temperature of 145°F. Remove from grill and let rest for 5 minutes before serving.
- 07Serve each pork chop topped generously with mango salsa. Grab a fork, a napkin, and maybe a steel drum playlist.
