Herb's take

We're taking a culinary layover in the Caribbean, where a quick spice rub transforms pork chops into a passport to flavor, and a mango salsa brings a tropical punch. You’ll master the art of blooming spices and balancing sweet, spicy, and tangy flavors, no airline ticket required.

Instructions

  1. 01
Pat the pork chops dry with paper towels and set aside.
  2. 02
In a small bowl, combine the ground allspice, cumin, brown sugar, garlic powder, 1 teaspoon of the kosher salt, black pepper, and cayenne pepper.
  3. 03
Rub the pork chops all over with 1 tablespoon of olive oil, then coat evenly with the spice mixture on both sides. Let them rest at room temperature for 15 minutes while you make the salsa.
  4. 04
Meanwhile, make the mango salsa: In a medium bowl, mix the diced mango, red onion, red bell pepper, jalapeño, lime zest, and juice, remaining 1/4 teaspoon kosher salt, chopped cilantro, and honey. Toss until combined. Cover and refrigerate until ready to serve.
  5. 05
Preheat a grill (or grill pan) over medium-high heat. Brush the grill grates with the remaining 1 tablespoon olive oil.
  6. 06
Grill the pork chops for 4 to 5 minutes per side, or until they reach an internal temperature of 145°F. Remove from grill and let rest for 5 minutes before serving.
  7. 07
Serve each pork chop topped generously with mango salsa. Grab a fork, a napkin, and maybe a steel drum playlist.
