Instructions
- 01If using wooden skewers, soak 8 skewers in water for at least 20 minutes to prevent burning on the grill.
- 02In a medium bowl, whisk together olive oil, apple cider vinegar, parsley, oregano, thyme, minced garlic, honey, smoked paprika, kosher salt, and black pepper until emulsified.
- 03Thread the cherry tomatoes, cucumber slices, and diced red onion onto the skewers, alternating for color and even cooking.
- 04Lay the vegetable skewers on a sheet pan and brush generously on all sides with the herb marinade, reserving 2 tablespoons for finishing.
- 05Preheat your grill to medium-high heat (about 400°F). Clean and oil the grates well.
- 06Grill the skewers uncovered for 5–7 minutes, turning occasionally, until the tomatoes blister, the onions soften, and the cucumbers show distinct grill marks but still have a little snap.
- 07Transfer skewers to a platter and brush with the reserved marinade. Season with additional salt and pepper to taste if desired. Serve hot or at room temperature.
