- 01In a large bowl, combine the chicken wings, minced garlic, white wine, sweet paprika, bay leaves, kosher salt, black pepper, and olive oil. Toss well to coat all pieces evenly. Cover and marinate in the refrigerator for at least 2 hours or up to overnight.
- 02Soak 8 wooden skewers in water for 30 minutes to prevent burning, or use metal skewers.
- 03Thread the marinated chicken wings snugly onto the skewers, folding each segment as needed to secure. Discard bay leaves from the marinade.
- 04Preheat your grill to medium-high. Clean and oil the grates well.
- 05Place the wing skewers on the grill. Cook, turning every 3–4 minutes, until deeply golden and crisp at the edges, 16–20 minutes total.
- 06While wings grill, whisk together the Portuguese mustard, honey, and white wine vinegar in a small bowl.
- 07Brush the glaze onto the skewers during the final 3 minutes of grilling, turning to caramelize all sides.
- 08Transfer the skewers to a platter. Rest for 5 minutes before serving. Sprinkle with parsley and serve with lemon wedges for squeezing.
