Inspired by the aromatic traditions of southern France, these Provençal wing skewers are an herbaceous twist on classic party fare. You’ll learn how to coax maximum flavor from garlic, rosemary, and thyme with a simple French-inflected grilling technique.

- 01If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- 02In a small bowl, combine the olive oil, minced garlic, thyme, rosemary, lemon zest, herbes de Provence, kosher salt, and black pepper. Whisk well to blend.
- 03Pat the chicken wings dry with paper towels. Place in a large bowl and add half of the oil-herb mixture. Toss until thoroughly coated. Cover and marinate in the refrigerator for at least 20 minutes, or up to 2 hours.
- 04Preheat a grill (charcoal preferred for extra flavor) to medium-high heat, about 400°F. Clean and oil the grates.
- 05Thread 3 to 4 chicken wing pieces onto each skewer, pressing them close together but not too tight to ensure even cooking.
- 06Grill the skewers, turning every 3 to 4 minutes, until the wings are deeply charred in spots and cooked through, about 16 to 20 minutes total.
- 07During the last 3 minutes of grilling, brush the wings all over with the remaining herb oil, allowing it to sizzle and perfume the wings.
- 08Transfer skewers to a platter. Let rest 5 minutes, then drizzle with lemon juice before serving.
