Instructions

  1. 01
Heat the coconut oil in a small skillet over medium heat. Add the curry powder and stir for 1 minute until fragrant.
  2. 02
Add the minced garlic to the skillet and cook for 30 seconds, stirring constantly so it doesn’t burn.
  3. 03
Transfer the curry-garlic oil to a large mixing bowl. Stir in the brown sugar, soy sauce, and the zest and juice of the lime.
  4. 04
Add the chicken strips to the bowl and toss thoroughly to coat. Marinate for 10 minutes while you prep toppings.
  5. 05
Preheat a grill or grill pan over medium-high heat.
  6. 06
Grill the marinated chicken strips for 2–3 minutes per side until deeply golden and cooked through. Transfer to a plate and let rest for 3 minutes.
  7. 07
Lay out the butter lettuce leaves on a platter. Top each with a few strips of grilled chicken.
  8. 08
Sprinkle generously with chopped peanuts, carrots, cilantro, and mint.
  9. 09
Serve immediately, letting everyone wrap and roll as they please. Season the wraps with extra lime or a dash of soy sauce if desired.
