- 01Heat the coconut oil in a small skillet over medium heat. Add the curry powder and stir for 1 minute until fragrant.
- 02Add the minced garlic to the skillet and cook for 30 seconds, stirring constantly so it doesn’t burn.
- 03Transfer the curry-garlic oil to a large mixing bowl. Stir in the brown sugar, soy sauce, and the zest and juice of the lime.
- 04Add the chicken strips to the bowl and toss thoroughly to coat. Marinate for 10 minutes while you prep toppings.
- 05Preheat a grill or grill pan over medium-high heat.
- 06Grill the marinated chicken strips for 2–3 minutes per side until deeply golden and cooked through. Transfer to a plate and let rest for 3 minutes.
- 07Lay out the butter lettuce leaves on a platter. Top each with a few strips of grilled chicken.
- 08Sprinkle generously with chopped peanuts, carrots, cilantro, and mint.
