- 01In a medium mixing bowl, combine the chicken cubes, garlic, the zest of 1 lemon, juice of both lemons, olive oil, oregano, smoked paprika, salt, and pepper. Toss thoroughly to coat all the chicken pieces.
- 02Cover the bowl and allow the chicken to marinate in the refrigerator for at least 20 minutes, or up to 2 hours for deeper flavor.
- 03While the chicken marinates, bring a pot with 3/4 cup water to a boil over high heat. Place a steamer basket with broccoli florets over the pot, cover, and steam for 4-5 minutes until just tender and bright green.
- 04Remove the broccoli to a plate and cover loosely with foil to keep warm.
- 05If using wooden skewers, soak them in water for at least 10 minutes to prevent burning.
- 06Preheat your grill or grill pan over medium-high heat.
- 07Thread the marinated chicken cubes onto 4 skewers, leaving a bit of space between pieces.
- 08Grill the chicken skewers for 3-4 minutes per side, turning once, until nicely charred and the internal temperature reaches 165°F.
- 09Transfer the cooked skewers to a clean plate and let them rest for 3 minutes before serving.
- 10Serve the chicken skewers alongside the steamed broccoli. Squeeze the remaining lemon zest over the chicken and broccoli just before serving for a final punch of brightness.
