This Chinese-inspired dinner turns the classic beef and broccoli on its head, ground beef sizzled with broccoli, tomatoes, and aromatics is served over punchy lemon-garlic rice, with a creamy avocado-salmon citrus aioli on the side. You'll master wok-quick searing, rice flavor-boosting, and the subtle art of emulsifying a silky aioli (without the pouty whisk tantrums).

Instructions

    Rinse the rice under cold water until it runs mostly clear, then combine with 3 cups water in a medium saucepan. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.

    While rice cooks, zest both lemons and juice them, keeping zest and juice separate. Set aside.

    In a large wok or high-sided skillet, heat 2 tablespoons vegetable oil over medium-high heat. Add half the minced garlic and half the diced onion. Sauté for 1 minute until fragrant.

    Add the ground beef and diced chicken. Stir-fry for 2-3 minutes, breaking up the beef, until starting to brown but not cooked through.

    Toss in the broccoli florets and continue stir-frying for 4 minutes, until broccoli turns bright green and is crisp-tender.

    Add tomatoes and 1 tablespoon soy sauce. Cook 2 more minutes, letting the tomatoes soften and juices start to glaze the meat.

    Season with salt and pepper to taste. Remove the stir-fry from heat, cover loosely, and let stand while you finish the rice and aioli.

    Fluff the rice with a fork. Stir in half the lemon zest, half the lemon juice, half the remaining garlic, and the remaining tablespoon vegetable oil. Season with salt and pepper.

    For the aioli: In a food processor or blender, combine avocado, diced raw salmon, remaining diced onion, remaining garlic, mayonnaise, remaining lemon zest, remaining lemon juice, 1 tablespoon soy sauce, and sugar. Blend until smooth and pale green. Taste and season with salt and pepper if needed.

    To serve: Make a bed of lemon-garlic rice on each plate. Spoon beef and broccoli stir-fry over top. Drizzle generously with citrus aioli, or serve it on the side for dipping. Garnish with a few extra cubes of avocado and salmon, if desired.
