- 01Preheat your oven to 350°F. Tear the dinner rolls into rough pieces and pulse in a food processor until you have medium, uneven crumbs.
- 02Spread the crumbs on a baking sheet and drizzle with the melted butter, tossing to coat. Bake for 10-12 minutes, stirring once, until golden and crisp. Let cool.
- 03Meanwhile, transfer the leftover mac and cheese to a medium saucepan. Add the milk and black pepper. Warm gently over medium-low heat, stirring often, until creamy and hot, about 5-7 minutes. If it seems too thick, add another splash of milk.
- 04Lay a tortilla on a clean work surface. Spread 1/2 tablespoon Dijon mustard down the center of each tortilla.
- 05Layer 2 oz of sliced ham over the mustard, shingling to cover.
- 06Spoon about 3/4 cup of the warmed mac and cheese over the ham.
- 07Sprinkle a scant 1/4 cup of toasted dinner roll crumbs over the mac and cheese, reserving extra crumbs for topping.
- 08Sprinkle each wrap with a half tablespoon of chopped parsley for fresh color.
- 09Fold in the sides of the tortilla, then roll up tightly from the bottom to form a burrito-style wrap.
- 10Place the wraps seam-side down on a clean, dry skillet over medium heat. Toast each side for 2-3 minutes until the tortilla is golden and slightly crisp.
- 11Slice in half, plate, and scatter the remaining toasted roll crumbs over the top for extra crunch. Serve hot.
