Inspired by Eastern European kitchen classics, this comforting stew draws flavor from a slow simmer of ground beef, ripe tomatoes, and plenty of garlic. You'll learn why browning meat and blooming aromatics make all the difference in building deep, craveable flavor.

Instructions

    Heat the olive oil in a large Dutch oven over medium-high heat. Add the ground beef and cook, breaking up with a spoon, until well-browned and most of the liquid evaporates, about 7 minutes.

    Add the onion, carrot, and celery, and sauté until softened, about 5 minutes.

    Stir in the minced garlic and cook just until fragrant, about 1 minute.

    Add the chopped tomatoes and cook, stirring, until they start to break down, about 4 minutes.

    Pour in the beef broth and bring to a simmer. Scrape up any browned bits from the bottom of the pot.

    Add the diced potato, bay leaf, smoked paprika, and thyme. Stir well, bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.

    Uncover, remove the bay leaf, and stir in the red wine vinegar. Simmer for 5 more minutes.

    Taste and season with salt and black pepper as needed. Ladle the stew into bowls and garnish with chopped parsley before serving.
