Inspired by Eastern European kitchen classics, this comforting stew draws flavor from a slow simmer of ground beef, ripe tomatoes, and plenty of garlic. You'll learn why browning meat and blooming aromatics make all the difference in building deep, craveable flavor.

Instructions
- 01Heat the olive oil in a large Dutch oven over medium-high heat. Add the ground beef and cook, breaking up with a spoon, until well-browned and most of the liquid evaporates, about 7 minutes.
- 02Add the onion, carrot, and celery, and sauté until softened, about 5 minutes.
- 03Stir in the minced garlic and cook just until fragrant, about 1 minute.
- 04Add the chopped tomatoes and cook, stirring, until they start to break down, about 4 minutes.
- 05Pour in the beef broth and bring to a simmer. Scrape up any browned bits from the bottom of the pot.
- 06Add the diced potato, bay leaf, smoked paprika, and thyme. Stir well, bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
- 07Uncover, remove the bay leaf, and stir in the red wine vinegar. Simmer for 5 more minutes.
- 08Taste and season with salt and black pepper as needed. Ladle the stew into bowls and garnish with chopped parsley before serving.
