Honey-Mustard Glazed Mediterranean Chicken Wings with Charred Lemon, Herbs, and Toasted Bread

Take your wings on holiday to the Mediterranean: these skewered beauties are kissed by fire, drenched in sweet-tart honey mustard, and finished with the crunch of toasted bread. You'll learn why grilling and glazing is a match made in science class (plus, a few herbaceous tricks up my sleeve).

- 01In a large bowl, whisk together Dijon mustard, honey, garlic, lemon zest, 2 tablespoons lemon juice, olive oil, smoked paprika, dried oregano, 1 teaspoon kosher salt, and black pepper to form a marinade.
- 02Add chicken wings to the marinade and toss well to coat. Let them marinate at room temperature for 20 minutes while you prep everything else.
- 03Meanwhile, preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 20 minutes to prevent an unplanned flambé.
- 04Thread the marinated chicken wings onto skewers, packing them snugly but not squished. Reserve leftover marinade for basting.
- 05Grill the wing skewers over direct heat, turning every 3-4 minutes, until nicely charred and cooked through, about 15 minutes total. Baste with reserved marinade during the last 5 minutes of grilling for a lacquered finish.
- 06While wings are grilling, drizzle bread slices with a bit of olive oil and grill until crisp and marked, 1-2 minutes per side.
- 07Cut lemon in half and grill, cut side down, until deeply browned and aromatic, about 2 minutes.
- 08Transfer skewers and bread to a platter. Squeeze grilled lemon over wings, shower with chopped parsley and mint, and sprinkle remaining 1/2 teaspoon salt on top. Serve immediately.
