Herb's take
Give day-old hot dog buns a new lease on life with this American-inspired breakfast strata. You’ll learn how stale bread can transform into a tender, custardy base just by borrowing a little science from classic bread pudding.

Instructions
- 01Preheat your oven to 350°F. Grease an 8-inch square baking dish with a bit of the melted butter.
- 02Scatter the torn hot dog buns evenly in the prepared dish and drizzle with the remaining melted butter. Toss gently to coat.
- 03In a large bowl, whisk together the eggs, granulated sugar, vanilla extract, ground cinnamon, kosher salt, and nutmeg until smooth.
- 04Slowly pour in the 1% milk while whisking constantly to make a well-blended custard.
- 05Pour the custard evenly over the buns, gently pressing them down so they absorb the liquid.
- 06Let the mixture stand at room temperature for 15 minutes to allow maximum soakage.
- 07Bake uncovered for 35-40 minutes, or until the top is golden brown and the center is just set (a knife inserted should come out mostly clean with a few moist crumbs).
- 08Cool for 10 minutes before slicing.
- 09Dust with powdered sugar and serve warm.
