Give day-old hot dog buns a new lease on life with this American-inspired breakfast strata. You’ll learn how stale bread can transform into a tender, custardy base just by borrowing a little science from classic bread pudding.

Instructions

  1. 01
Preheat your oven to 350°F. Grease an 8-inch square baking dish with a bit of the melted butter.
  2. 02
Scatter the torn hot dog buns evenly in the prepared dish and drizzle with the remaining melted butter. Toss gently to coat.
  3. 03
In a large bowl, whisk together the eggs, granulated sugar, vanilla extract, ground cinnamon, kosher salt, and nutmeg until smooth.
  4. 04
Slowly pour in the 1% milk while whisking constantly to make a well-blended custard.
  5. 05
Pour the custard evenly over the buns, gently pressing them down so they absorb the liquid.
  6. 06
Let the mixture stand at room temperature for 15 minutes to allow maximum soakage.
  7. 07
Bake uncovered for 35-40 minutes, or until the top is golden brown and the center is just set (a knife inserted should come out mostly clean with a few moist crumbs).
  8. 08
Cool for 10 minutes before slicing.
  9. 09
Dust with powdered sugar and serve warm.
