Instructions
- 01Bring 6 cups of water to a boil in a large pot. Add ramen noodles and cook for 2 minutes, just until barely tender. Drain and set aside.
- 02While noodles cook, prep all veggies and slice hot dogs.
- 03Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high until shimmering. Add sliced hot dogs and cook, stirring occasionally, until browned in spots, about 3 minutes. Remove and set aside.
- 04Add remaining 1 tablespoon vegetable oil to the pan. Toss in carrot, bell pepper, and the white parts of the scallions. Stir-fry for 2 to 3 minutes until crisp-tender.
- 05Add garlic, ginger, and red pepper flakes. Stir just until fragrant, about 30 seconds.
- 06Return browned hot dogs to the skillet. Add drained ramen noodles.
- 07In a small bowl, whisk together soy sauce, brown sugar, and 2 tablespoons water. Pour over noodle mixture in the pan.
- 08Toss everything well and stir-fry 2 minutes, until sauce thickens and coats noodles.
- 09Drizzle in sesame oil and rice vinegar, tossing to combine.
- 10Remove from heat. Scatter scallion greens, cilantro, and sesame seeds over the top. Serve immediately and enjoy your hot dog ramen upgrade.
