    Preheat broiler on high and arrange oven rack 6 inches from heat.

    Place poblano and red bell pepper on a foil-lined baking sheet and broil, turning with tongs, until skins are charred all over, about 10 minutes.

    Transfer peppers to a bowl, cover, and let steam 10 minutes. Peel, discard skins and seeds, then dice peppers.

    In a small bowl, mix diced peppers with hot sauce, garlic, cilantro, oregano, cumin, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Set filling aside.

    Butterfly the pork tenderloin: With a sharp knife, slice lengthwise down one side, stopping about 1/2 inch from the other edge, then open like a book. Place between sheets of plastic wrap and pound to an even 3/4-inch thickness.

    Season inside of the pork with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Spread pepper-hot sauce filling evenly over the surface.

    Roll pork up tightly from the long side, jellyroll-style. Tie with kitchen twine at 2-inch intervals.

    Rub outside of pork with 1 tablespoon oil, then season with remaining 1 teaspoon salt and 1/4 teaspoon black pepper.

    Heat remaining 1 tablespoon oil in a large ovenproof skillet over medium-high. Sear pork on all sides until golden, 2 to 3 minutes per side.

    Transfer skillet to oven. Roast at 400°F until pork registers 145°F at the center, about 18 to 22 minutes.

    While pork rests, toss onion, zucchini, and tomatoes with a big pinch of salt and a drizzle of oil. Spread on a clean baking sheet and broil until vegetables are charred and tender, 7 to 9 minutes, stirring halfway.

    Slice pork crosswise into thick rounds. Serve over charred vegetables with lime wedges for squeezing.
