    Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and break up with a spatula, cooking until browned and cooked through, about 6–7 minutes.

    Add the diced onion and sauté until translucent, about 4 minutes.

    Stir in the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.

    Pour in the whole peeled tomatoes with their juices. Use a wooden spoon (or clean hands, if you’re feeling rustic) to crush the tomatoes in the pan.

    Add the dried oregano and bring the mixture to a simmer. Reduce heat to medium and let the sauce bubble uncovered for 15–18 minutes, stirring occasionally, until thickened.
