- 01Heat the olive oil in a large skillet over medium-high heat. Add the Italian sausage and break up with a spatula, cooking until browned and cooked through, about 6–7 minutes.
- 02Add the diced onion and sauté until translucent, about 4 minutes.
- 03Stir in the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
- 04Pour in the whole peeled tomatoes with their juices. Use a wooden spoon (or clean hands, if you’re feeling rustic) to crush the tomatoes in the pan.
- 05Add the dried oregano and bring the mixture to a simmer. Reduce heat to medium and let the sauce bubble uncovered for 15–18 minutes, stirring occasionally, until thickened.
- 06Stir in the balsamic vinegar. Season with salt and pepper to taste.
- 07Remove the skillet from heat. Scatter the mozzarella pearls evenly over the top and cover for 2 minutes, just until the cheese softens and gets melty but not fully runny.
- 08Sprinkle with fresh basil and serve immediately, ideally with warm crusty bread or over cooked pasta.
