Let’s take the humble chicken wing on a Roman vacation. This appetizer features char-grilled wings skewered and bathed in a garlicky lemon-herb marinade, with a cooling yogurt dip for contrast.

- 01In a large bowl, combine parsley, basil, oregano, minced garlic, lemon zest, lemon juice, olive oil, red pepper flakes, salt, and black pepper. Stir well to make a vibrant marinade.
- 02Add chicken wings to the bowl and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, or up to overnight.
- 03Meanwhile, in a small bowl, mix Greek yogurt, 1 tablespoon chopped parsley (from the amount above), honey, and a pinch of salt. Chill until ready to serve.
- 04Thread marinated wings onto metal or soaked wooden skewers, 3-4 pieces per skewer, allowing a little space between each for even cooking.
- 05Preheat a grill to medium-high heat and oil the grates. Grill the wing skewers for 5-6 minutes per side, rotating once, until well charred and the internal temperature reaches 175°F.
- 06Transfer skewers to a platter and let rest 3 minutes before serving with the lemon-herb yogurt dip.
